bike carbs larger than 32mm should be adequate for a stock motor. mikuni and weber sides though are 40/44/45mm they're outfitted with 32/34mm chokes from the factory (upgradeable to larger chokes obviously).

the only difference is available intake manifolds. they'll have to be custom fabbed.

i've got several bike carb projects in the oven using varying size carbs and ITBs (w/ megasquirt).
